Bluegill Parmesan


Ingredients:1/4 cup butter, melted1/2 cup dry bread crumbs1/3 cup grated Parmesan cheese2 tablespoons minced fresh parsley1 teaspoon salt1/2 teaspoon paprika1/4 teaspoon dried oregano1/4 teaspoon dried basil1/4 teaspoon pepper
1 pound bluegill or crappie

Directions:
Place butter in a shallow bowl
In another shallow bowl, combine the bread crumbs, cheese and seasonings
Dip fish in butter, then coat with crumb mixture
Place in a greased 15-in x 10-in x 1-in baking pan
Bake, uncovered, at 350° for 20 minutes or until fish flakes easily with a fork
Yield: 4 servings
